Ranch Dijon Chicken

{Original Recipe Here}

Ingredients:
2 packages chicken tenderloin
1 cup ranch dressing
1/3 cup dijon mustard
1/2 cup of butter
1/3 cup of dry white wine
1 tsp minced garlic
seasoning to taste, optional
(I used garlic powder, onion powder, salt & pepper)

Directions:
Whisk together ranch, dijon mustard, minced garlic and seasoning. Set aside.
Saute chicken in butter until brown. Remove chicken from skillet.
Pour wine into skillet and let simmer on medium high for a minute.
Whisk in ranch/dijon mixture. Blend Well.
Enjoy!

Leftovers: Chicken Tortilla Soup

So you made shredded chicken tacos and they were freaking amazing. But you don't want to be stuck eating the same thing for the next 3 days. This recipe for chicken tortilla soup is super simple and will definitely shake things up.

Ingredients:

2-3 cups of leftover shredded chicken
One 32 oz box of chicken broth
2 handfuls chopped cilantro
One squeezed lime
2 cans diced tomatos
1 can corn, drained
1 can black beans
3 tablespoons tomato paste
1/2 yellow onion
2 tsp cumin
2 tsp chile powder
2 tsp garlic powder

Put it all in a pot and simmer for 30 minutes. It's that easy!
For extra yumminess add shredded cheese and crispy tortilla strips.

Healthy Eats: Southwest Turkey Burger



Ingredients
1 pound ground turkey
1/3 cup black bean and corn salsa
1 egg
1 tomato, sliced
1 avocado, just the guts
1 lime, juiced
Optional garlic salt

In a medium bowl, combine the turkey, salsa and egg. Mix well. It should make about 4 patties.
Cook it up in a pan or griddle. Make sure to cook all the way through. Mix avocado, lime juice,  and a pinch of garlic salt. Top of burger with this guac and a tomato slice. Since I was avoiding hamburger buns it ended up being easier chopping up the tomato and putting in the guac.

So this week I went on the dreaded "diet." It's the Jillian Michaels 7-Day Kickstart your metabolism booklet that came with the workout program. It started of with plain greek yogurt with cinnamon and almonds. BLEH pretty gross. Then I saw turkey burgers on the menu and I figured it would just be equally sad. WRONG. It was so yummy! Of course I modified the recipe. I was supposed to have brussels sprouts with the burger. Sorry, not happening. I had some roasted zucchini instead.

Normally I just oversleep, or am too distracted by school, work or whatever to eat. Then I find myself starving and just eating something quick and not great for me (ahh taco hell). Actually taking the time to cook again hasn't been perfect but it's definitely been rewarding. I hope you enjoy the recipe.

1 tsp curry
a tiny bit of mustard
salt & pepper to taste

Lavender Bath Salth



{Instructions from blog uTry.it}
1 cup Epsom salt
1/2 cup Sea salt
2 tablespoons dried lavender buds
10 to 15 drops of lavender essential oil
a few drops of lavender soap colorant

Combine all ingredients and place in an airtight container. Let it rest for a few days before you use it to allow the lavender and essential oils to infuse the salts.
